I’m not really wild about corned beef, unless it’s exceptionally lean.
My mother was not the best cook. With ten mouths (8 kids) to feed, she had to cook and shop frugally. She boiled everything. EVERYTHING.
So, I’ve tried her boiled corned beef and cabbage and I didn’t care for it.
Since then I’ve searched for more creative approaches. Of course, start with the leanest cut you can find.
Taste of Home has a nice simple recipe for you to try. This is a slow cooker recipe that you can set in the morning and forget it.
